So you have TOO MANY tomatoes and don’t know what to do with them all?
It is really a great problem to have – all those garden-fresh tomatoes – but unfortunately they don’t last that long once they are ripe! Here at our farm we always plant several different kinds of tomatoes, but it is hit-or-miss as to how many actually ripen before we get our first frost (often as early as the beginning of September). If you haven’t read about GottaGoat Farm yet, we are located quite high up a mountain, so our weather here can be a bit extreme. However, when the weather is hot (such as this year), we end up eating tomatoes on a daily basis, but we never seem to have quite enough that ripen all at once. I usually “cheat” and run down to a local produce stand to buy a 20 lb. case of their “canning tomatoes”, so I can preserve some of those wonderful fresh tomatoes for the coming months. And, you are able to control the salt and other additives, to keep your tomato dishes healthy!
